Poha / Rice Flakes

  • Rice flakes (poha, flattened rice, beaten rice) are made by parboiling rice, then flattening it into thin flakes.

  • They come in various thicknesses: thin, medium, thick. The thinner ones cook faster; thicker ones hold up better in “wet” dishes without getting mushy. 

  • They are used in many South Asian cuisines: in breakfast dishes (e.g. “poha”), snacks (e.g. chivda), or as part of sweet or savory preparations
